Coconut & Raisin Flapjacks.





This is a really simple but yummy flapjack recipe which is sweet and so delicious. It is vegan and refined sugar free.

Ingredients:
-225g oats.
-75g coconut oil.
-150g sweet freedom or any other liquid sweetener.
-50g raisins.

Start by melting the coconut oil and sweet freedom in a large pan. Once it has all melted stir in the oats and raisins. This may take a while to coat all of the oats but just keep stirring. Next line a tin and press the flapjack mixture in to it. Place in the oven on 170'c if its a fan oven and 180'c if normal for 20 minuets or until golden brown. Once they come out of the oven cut them in to the shape you want and leave to cool. When they are cool remove from the tin and enjoy.

Chocolate Chip Cookies.



 Chocolate chip cookies have got to be one of my favourite and these are soft, crumbly and jam packed with chocolate chips. Also perfect for dipping in a brew. !
This recipe makes 8 cookies but you can double it to make more.

ingredients:
-100g wholemeal self raising flour.
-13g raw Lucama powder (can just use more flour).
-22g coconut palm sugar.
-23g sweet freedom.
-23g coconut oil.
-31g almond milk.
-1/2 tsp vanilla extract.
-32g dark chocolate chips.

start by mixing the flour, Lucama and coconut palm sugar together next add the sweet freedom, coconut oil (melt the coconut oil first), almond milk and vanilla extract and bring the mixture together. This will be easier to do with your hands. Add the chocolate chips to the mixture and shape in to any shape you want and place in the oven on 170'c for 12 minuets.

you can substitute the coconut palm sugar and sweet freedom for whatever sugar and liquid sweetener you want.

Cinnamon, Raisin & Apple Muffins


These muffins are so tasty, they have a light spongy texture and a subtle cinnamon flavour. They are also vegan and free from refined sugar. I love to eat mine with peanut butter and a coffee.   
This recipe makes 5 muffins but you can easily double it to make a larger quantity.

ingredients:
-100g wholemeal self raising flour.
-20g coconut palm sugar (you can use any other sugar/ sweetener).
-40g Almond milk.
-1/2 tsp ground cinnamon.
-1/2 tsp baking soda.
-100g apple puree.
-44g raisins.

start by mixing the coconut palm sugar, almond milk and apple sauce together then add the flour,cinnamon and baking soda. Next fold in the raisins. place the mixture in to the muffin cases and bake for 18-20 minuets. oven 170'c fan oven -180'c normal.

Lightly spiced coriander falafels

These falafels are lightly spiced with cumin and coriander so they are not very strong but they do taste delicious with houmous (hummus- does anyone ever know how to spell it?!) 

Ingredients: 
-1 can of chickpeas drained (drained weight around 248g). 
-1/2 tsp ground cumin.
-1/2 tsp ground coriander.
-1/2 tsp cayenne pepper.
-small bunch of fresh coriander.
You can use more or less spice. 
-1 large or a couple of small garlic cloves. 
-50g chopped onion. 
-2tbs wholemeal flour (around 17g). 

These are so simple to make, all you have to do is pop everything in a food processor leaving the onions and coriander until last as you don't want them to be as smooth as the rest of the falafel. Once you have done this shape them in to what ever shape you want I once made them into little hearts!. I usually freeze them at this stage and then take them out if the freezer a couple at a time and bake from frozen. You can also cook them straight away instead of freezing by frying in a little bit of oil for a couple of minuets each side or baking them for around 25 mins oven 200'c until golden brown.
