Chocolate Chip Cookie Dough 'Larabar'

This is my all time favourite flavour larabar but because I live in the uk it's quite expensive to get hold of them. 
I decided since they are made with such simple ingredients they wouldn't be so hard to make! 
So here is a single serving choclate chip cookie dough bar. 

Ingredients: 
-30g dates.
-10g cashews. 
-10g dark chocolate chips. 

Simply place the dates and cashewsin a  food processor until it starts to all stick together. Next add the choclate chips by hand. You could add them to the processor near the end but they may break up a bit to much!.

Shape into whatever shape you want and store in the fridge to keep it firm.

Ginger bread cookies.

These cookies are both sweet and spicy. One of my favourite types of cookie. 
They are soft and crumbly and also make great Dunkers for your tea/coffee! 
This recipe makes about 14 cookies depending on how big or small you make them! 

Ingredients: 
-226g wholemeal self raising flour.
-47g sweet freedom (liquid sweetener).
-44g coconut palm sugar (or any other sugar).
-1tsp ground ginger. Use more or less depending on how 'gingery' you want them. 
-47g coconut oil. 
-62g unsweetened almond milk. 

Start by melting your coconut oil if it's solid I like to so this by placing it in a small bowl over some hot water. Next mix all of the ingredients in a large bowl and bring it togher with your hands. Shape into what ever shape you want and bake on 170'c for 10-12 minuets.
